Having filmed his cooking shows on his YouTube in an, albeit beautiful, kitchen previously, living in the countryside is not just adding to his personal life, but his professional one too. Sometimes you just need to calm down and just go with one wavelength and that's the beauty of being in the countryside. When you're in any busy city, there's so many distractions - you're hearing sirens one minute then there's busy traffic the next minute. вЂњJust reconnecting with is just a lovely feeling. Seeing red kites, these amazing birds with like a four foot or five-foot wingspan, just flying above my headвЂ¦ It's just unbelievable. вЂњI wake up in the morning and there may be cows looking at me through my window or a family of deer just outside my window.

вЂњIt's just dramatically changed my whole philosophy on life,вЂќ he tells us. And since swapping the smog for fresh country air, it seems he is all the better for it. 'After all those lockdowns living on my own in London, although it's obviously a super busy city, when you're in a flat or an apartment, you feel a little bit trapped and with no big open spaces - you could go to the parks, but they were super busy- I just felt a trappedвЂ¦ I needed to feel free' he says from a bustling little cafe close to his new abode.

He has since written three books - Plants Only Kitchen, Vegan 100 and Vegan Christmas (read how to make the perfect festive nutroast here)- and has amassed a whopping 1.4million subscribers on YouTube and 630,000 followers on Instagram.ДЄfter living in the big smoke for almost five years, 29-year-old Gaz had a вЂњsubconscious callingвЂќ to live in the countryside - and what better place to go than his homeland, Wales. More fondly known by his followers as the Avant Garde Vegan, he uprooted his life to follow his dream of growing his own food and getting back to basics with nature. Moving to the rural countryside in south Wales from the grinding streets of London London around a year ago has been a learning curve yet freeing experience for Cardiff born vegan chef Gaz Oakley.
